Coconut flour
Coconut flour is made from dried, defatted coconut meat ground into a fine powder, with a mild coconut flavour and a very high fibre content. It absorbs liquid much more than wheat or other gluten-free flours, so recipes typically use less of it along with additional liquid or eggs. It is naturally gluten-free and commonly used in low-carbohydrate and paleo baking.
