Coconut oil (melted)
Coconut oil is extracted from the flesh of mature coconuts, and is solid at cool room temperatures but melts easily with gentle heat. It is used for baking, frying, and sautéing, and unrefined versions carry a distinct coconut flavour and aroma, while refined versions are more neutral. Its solid-to-liquid behaviour around room temperature affects how it performs in recipes compared to always-liquid oils.
Melting collapses the air pockets present in the solid form, so melted measurements are consistently denser — and heavier per cup — than solid or softened measurements.
