Coconut sugar

Coconut sugar is made by boiling down the sap collected from coconut palm flowers until it crystallises, resulting in a light brown sugar with a flavour similar to brown sugar or caramel. It is used as a one-to-one substitute for regular sugar in many recipes, though it has a slightly less sweet, more complex taste. Unlike its name suggests, it does not taste distinctly of coconut.
