Coriander (ground)
Coriander, in most of the world outside North America, refers to the fresh, leafy herb also known as cilantro, with a bright, citrusy flavour that some people perceive as soapy. It is used raw as a garnish or in salsas, salads, and curries, typically added toward the end of cooking since its flavour fades with heat. Its stems are also flavourful and are often used alongside or instead of the leaves in cooking.
Grinding reduces an ingredient to a fine, even texture that generally packs more densely than a whole or crushed form.
