Currants (dried)
Currants, in the dried fruit sense, are tiny, dark, dried grapes made from a seedless variety, distinct from fresh currants which are a type of berry. They are used in baking, particularly in fruit cakes, scones, and puddings, where their small size distributes evenly throughout a batter. They are more intensely flavoured and less sweet than raisins, to which they are often compared.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
