Curry paste (green)

Curry paste is a concentrated blend of aromatics, chillies, and spices ground together into a thick paste, used as the flavour base for curries, particularly in Thai and Southeast Asian cooking. It is typically fried briefly in oil or coconut cream at the start of cooking to release its aromatic oils before other ingredients are added. Different colours and styles, such as red, green, or yellow, indicate different chilli and spice combinations.
