Dark chocolate (chips)
Dark chocolate is chocolate made with a higher proportion of cocoa solids and little or no milk, giving it a more intense, slightly bitter flavour compared to milk chocolate. It is used in baking, confectionery, and eaten on its own, with higher cocoa percentages generally producing a firmer texture and less sweetness. Its lower sugar and milk content make it behave differently than milk chocolate when melted and tempered.
