Dashi stock
Dashi stock is a foundational Japanese broth typically made by steeping kombu seaweed and dried bonito flakes in hot water, producing a light, savoury liquid rich in umami. It forms the base for miso soup, noodle broths, and many simmered dishes in Japanese cooking. Vegetarian versions are made using kombu and dried shiitake mushrooms instead of bonito.
