Date sugar

Date sugar is made by grinding dried, dehydrated dates into a coarse, granular powder, retaining the fibre and nutrients of the whole fruit. It has a flavour closer to caramel or brown sugar and does not dissolve in liquid the way regular sugar does, since it is made from whole fruit rather than crystallised sugar. It is used as a less-processed sugar substitute in baking, though its texture requires some adjustment in recipes.
