Dried basil
Dried basil is fresh basil that has been dehydrated, resulting in a more concentrated but less bright and aromatic flavour than the fresh herb. It is used in dishes where fresh basil is unavailable or where longer cooking times would wilt fresh leaves anyway, such as sauces and stews. Its flavour is generally considered a poor substitute for fresh basil in dishes where basil is the star ingredient.
