Dried rosemary
Dried rosemary is fresh rosemary that has been dehydrated, retaining much of its strong, piney, slightly resinous flavour, sometimes even more concentrated than the fresh herb. It is used in roasts, stews, and marinades, and its tougher, needle-like texture means it holds up well to long cooking. Because it does not soften like fresh rosemary, dishes are sometimes strained or the herb finely crushed before use.
