Dried scallops
Dried scallops, also known as conpoy, are scallops that have been dried and sometimes lightly fermented, concentrating their sweet, briny, umami flavour into a firm, chewy texture. They are used in Chinese cooking, typically rehydrated and shredded, to add deep savoury flavour to soups, congee, and braised dishes. Their intense flavour means only a small amount is typically needed to season a dish.
