Duck fat
Duck fat is rendered fat from ducks, prized in cooking for its rich flavour and relatively high smoke point, traditionally used in French cuisine. It is used for roasting potatoes, confit preparations, and sautéing vegetables, imparting a distinctive savoury richness. At room temperature it is solid, similar to other rendered animal fats.
