Einkorn flour
Einkorn flour is milled from einkorn wheat, an ancient grain variety, producing a flour with a nutty flavour and a different, generally weaker gluten structure than modern wheat flour. It is used in baking bread, pastries, and other goods, often requiring adjustments to hydration and kneading due to its distinct gluten behaviour. Some people who are sensitive to modern wheat find einkorn easier to tolerate, though it is not gluten-free.
