Einkorn (whole grain)
Einkorn is one of the oldest cultivated wheat varieties, with a smaller grain and a different genetic structure than modern wheat, giving it a nuttier flavour and lower gluten content. It is cooked whole as a grain or ground into flour for bread and other baked goods. Its lower gluten content produces a denser, less elastic dough than modern wheat.
