Emmental (grated)
Emmental is a firm, pale yellow Swiss cheese known for its large, characteristic holes and a mild, slightly nutty, sweet flavour. It is used in sandwiches, melted into fondue, and grated over gratins, valued for its smooth melting properties. Its holes form naturally during the aging process from gas produced by bacteria.
Grating produces fine shreds that pack more densely than larger chopped or sliced pieces of the same ingredient.
