Emmer (whole grain)
Emmer, also known as farro in some contexts, is an ancient wheat variety with a chewy texture and nutty flavour, grown since antiquity. It is cooked whole as a grain in salads, soups, and pilafs, or milled into flour for baking. It generally requires longer cooking than modern wheat berries due to its tougher outer bran.
