English mustard
English mustard is a very sharp, hot mustard made from ground mustard seeds, typically mixed with water into a smooth, bright yellow paste. It is far more pungent than milder mustards like Dijon or American yellow mustard, and is traditionally served alongside roast beef and used in Welsh rarebit. Its intense heat comes from the enzymatic reaction triggered when the dry powder is mixed with water.
