Erythritol
Erythritol is a sugar alcohol used as a low-calorie sweetener, occurring naturally in small amounts in some fruits but produced commercially through fermentation. It has roughly 70 percent of the sweetness of sugar and a similar granular texture, making it a common substitute in low-sugar baking. It does not caramelise or brown like regular sugar, so it behaves differently in some cooked applications.
