Evaporated milk
Evaporated milk is milk that has had about 60 percent of its water removed through heating, giving it a thicker consistency and a slightly caramelised flavour from the heating process. It is used in baking, custards, and sauces where a richer, more concentrated milk is desired without the sweetness of condensed milk. It is shelf-stable in its canned form until opened.
