Fenugreek (ground)

Fenugreek refers to the small, hard, yellowish-brown seeds of the fenugreek plant, with a distinctively bitter, slightly maple-like flavour, or to its fresh leaves, which have a milder, grassy taste. Seeds are used in Indian and Middle Eastern spice blends and pickles, typically toasted or fried briefly to temper their bitterness. The fresh or dried leaves, called methi, are used as a vegetable or herb in curries and flatbreads.
