Fenugreek seeds
Fenugreek seeds are small, hard, yellowish-brown seeds with a bitter, slightly maple-like, nutty flavour, common in Indian, Middle Eastern, and North African cooking. They are used whole in spice blends, pickles, and tempered oil dishes, and are often toasted or fried briefly to soften their natural bitterness. Excessive use or burning the seeds can make a dish unpleasantly bitter.
