Fermented black beans
Fermented black beans are salted, fermented soybeans with a strong, pungent, savoury flavour, used widely in Chinese cooking. They are typically rinsed to reduce excess saltiness, then chopped or mashed and cooked briefly in oil to release their aroma before being added to stir-fries and sauces like black bean sauce. Their intense flavour means only a small quantity is needed to season a dish.
