Finger lime (pearls)

Finger lime is an elongated Australian citrus fruit whose flesh consists of small, round, juice-filled vesicles often compared to caviar in appearance and the way they burst with tart, citrusy juice. It is used as a garnish for seafood, salads, and desserts, valued more for its visual appeal and texture than as a juicing citrus. Its flesh comes in various colours, from pale yellow to pink, depending on the variety.
