Flageolet beans (canned drained)
Flageolet beans are small, pale green French legumes harvested before full maturity, with a delicate, slightly sweet flavour and a creamy texture. They are traditionally served alongside lamb in French cooking, as well as in soups and salads. Their tender skins and mild flavour distinguish them from heartier, more robust beans.
Once drained of its canning liquid, this ingredient weighs less per cup than it does undrained, though usually more than the dried, unsoaked form.
