Forbidden rice (uncooked)

Forbidden rice, also known as black rice, is a variety of rice with a deep purple-black bran layer that turns a rich purple colour when cooked, and a slightly nutty, sweet flavour. It is used as a side dish, in salads, and in desserts, historically reserved for Chinese royalty, hence its name. Its bran layer, like brown rice, means it takes longer to cook than white rice.
