Freekeh (dry, whole grain)
Freekeh is a grain made from young, green durum wheat that has been roasted and rubbed, giving it a distinctive smoky, nutty flavour and a chewy texture. It is used in Middle Eastern cooking in salads, pilafs, and soups, cooked similarly to other whole grains by simmering in liquid. Its smoky flavour, developed during the roasting process, distinguishes it from other wheat-based grains.
In its dry form this ingredient hasn't absorbed liquid, so it's noticeably lighter per cup than it would be once soaked or cooked.
