French lentils (dried)
French lentils, often referring to Puy lentils, are small, dark green-blue lentils that hold their shape particularly well after cooking, with a peppery, earthy flavour. They are used in salads, side dishes, and braises where a firm, distinct lentil texture is desired rather than a soft, mushy result. They do not require pre-soaking and cook relatively quickly compared to dried beans.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
