Galangal (fresh grated)
Galangal is a rhizome closely related to ginger, with a sharper, more citrusy and piney flavour and a tougher, woodier texture. It is a key aromatic in Thai and other Southeast Asian curry pastes and soups, typically sliced or pounded rather than grated due to its fibrous texture. It is generally not eaten whole in the way ginger sometimes is.
