Glass noodles (dried)

Glass noodles, also known as cellophane noodles, are thin, translucent noodles made from mung bean or other starches rather than wheat flour. They turn clear and slippery once cooked, with a chewy, springy texture, and are used in soups, salads, and stir-fries across East and Southeast Asian cooking. They typically require soaking in hot water before use rather than boiling like wheat noodles.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
