Gochugaru
Gochugaru is a Korean red chilli powder or flakes, made from sun-dried chillies, with a moderate heat and a slightly sweet, smoky, fruity flavour. It is a key ingredient in kimchi and many Korean stews and sauces, contributing both colour and a distinctive flavour different from other chilli powders. Its coarser texture compared to fine chilli powder is characteristic of the ingredient.
