Gochujang (paste)
Gochujang is a thick, fermented Korean chilli paste made from chilli powder, glutinous rice, and fermented soybeans, with a flavour that is spicy, sweet, and deeply savoury. It is used as a base for sauces, marinades, and stews, or stirred directly into rice and noodle dishes for a concentrated burst of flavour. Its thick, sticky consistency and fermented depth distinguish it from fresh chilli pastes.
As a paste, this ingredient has no trapped air and packs solidly into a measuring cup, similar to a thick liquid.
