Grits (dry)
Grits are a coarsely ground corn porridge, similar to polenta, popular in Southern American cooking, typically simmered in water or milk until thick and creamy. They are served as a side dish, often with butter, cheese, or shrimp, and their texture depends on the coarseness of the grind and cooking time. Stone-ground grits retain more texture than more finely processed instant varieties.
In its dry form this ingredient hasn't absorbed liquid, so it's noticeably lighter per cup than it would be once soaked or cooked.
