Guajillo chilli (dried)
Guajillo chilli is a mild to moderately spicy dried Mexican chilli with a smooth, dark red skin and a fruity, slightly tangy flavour. It is rehydrated and blended into sauces, salsas, and marinades, and is a common ingredient in mole sauces. Its flavour is milder and less smoky than ancho chilli, to which it is often compared.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
