Guar gum

Guar gum is a thickening and stabilising agent derived from guar beans, ground into a fine powder that swells and thickens significantly when mixed with liquid. It is used in gluten-free baking to add structure and elasticity that gluten would otherwise provide, as well as in sauces and ice cream to prevent ice crystal formation. Only a small amount is needed due to its strong thickening power.
