Halloumi (diced)
Halloumi is a semi-hard, brined cheese traditional to Cyprus, made from a mix of goat's and sheep's milk, with a high melting point that allows it to be grilled or fried without collapsing. It develops a golden, slightly crisp crust when cooked while remaining soft and squeaky inside. It is typically eaten warm, shortly after cooking, since it can become rubbery as it cools.
