Jicama (diced)
Jicama is a crisp, juicy root vegetable with a thin brown skin and a mild, slightly sweet flavour similar to a cross between an apple and a potato. It is most often eaten raw, sliced into sticks or salads, though it can also be lightly cooked. Its crunchy texture holds up well even after being cut and left to sit.
