Juniper berries (dried)
Juniper berries are small, dark purple berries with a piney, resinous flavour, best known as the primary flavouring in gin. They are used whole or crushed in marinades, braises, and sauces, particularly with game meats and sauerkraut, where their aromatic bitterness cuts through rich flavours. Their strong flavour means they are used in relatively small quantities.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
