Kencur (powder)

Kencur, also known as aromatic ginger or sand ginger, is a rhizome related to ginger and galangal, with a sharp, camphor-like, slightly bitter flavour. It is used in small amounts in Indonesian and Malaysian cooking, particularly in spice pastes and traditional drinks like jamu. Its potent, medicinal flavour means it is used more sparingly than ginger or galangal.
