Kimchi (chopped)
Kimchi is a Korean fermented vegetable dish, most commonly made from napa cabbage seasoned with chilli, garlic, ginger, and fish sauce or salted shrimp. It has a tangy, spicy, funky flavour that develops and intensifies with fermentation time, eaten as a side dish or used as an ingredient in soups, fried rice, and pancakes. Its flavour becomes progressively more sour and pungent the longer it ferments.
Chopping breaks an ingredient into pieces, which changes how much air gets trapped between them compared with the whole form.
