Kombu (dried, shredded)

Kombu is a type of dried edible kelp, a key ingredient in Japanese dashi stock, valued for the deep, savoury umami flavour it releases when simmered gently in water. It is also used to season simmered beans and, when cut into strips, as a wrapper or garnish. It should not be boiled vigorously, as this can make the resulting stock slimy or bitter.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
