Kudzu starch

Kudzu starch is a fine starch extracted from the root of the kudzu vine, used as a thickening agent in East Asian cooking. It produces a glossy, clear thickened liquid similar to arrowroot, and is used in sauces, soups, and some traditional sweets. It is typically dissolved in cold water before being added to a hot dish to prevent clumping.
