Laos powder (powder)
Laos powder is a Dutch and Indonesian name for dried, ground galangal, a rhizome related to ginger with a sharp, citrusy, slightly piney flavour. It is used in Indonesian and Southeast Asian spice blends and curry pastes when fresh galangal is unavailable. Its flavour is more concentrated but less complex than the fresh root.
As a fine powder, this ingredient packs densely into a cup with very little trapped air.
