Lavender (dried, culinary)

Lavender is a fragrant purple flowering herb, used in cooking primarily for its floral, slightly sweet aroma, most often as dried buds. It is used sparingly in baking, syrups, and infusions, as its strong perfume can easily overwhelm a dish if overused. It is often paired with citrus or honey to balance its floral intensity.

Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
