Lemon juice (freshly squeezed)
Lemon juice is the tart, acidic liquid extracted from lemons, used to add brightness and balance to both sweet and savoury dishes. It is used in dressings, marinades, baking, and drinks, and its acidity can also help prevent cut fruit from browning or tenderise proteins in a marinade. Fresh lemon juice generally has a brighter flavour than bottled versions.
Freshly squeezed liquid has no added water or concentration, giving a straightforward liquid density.
