Lemon myrtle (dried, ground)
Lemon myrtle is an Australian native herb with an intensely lemony flavour and aroma, stronger and more concentrated than lemon zest, used dried and ground as a spice. It is used in baking, teas, and savoury dishes for a citrus flavour without the acidity of actual lemon juice. Its potency means it is generally used in smaller quantities than other citrus flavourings.
Drying removes most of the water content, leaving a lighter, more concentrated product that weighs considerably less per cup than its fresh equivalent.
