Lemon zest (loosely packed)
Lemon zest is the thin, colourful outer peel of the lemon, grated or peeled away from the bitter white pith beneath. It carries concentrated citrus oils and is used to add bright lemon flavour to baking, dressings, and savoury dishes without the acidity of the juice. Only the coloured outer layer is used, since the white pith underneath is notably bitter.
Loosely packed means the ingredient is added to the cup without pressing it down, leaving air pockets that make it weigh less than the same amount firmly packed.
