Lentil flour
Lentil flour is made from ground dried lentils, with a mild, earthy, slightly nutty flavour and a high protein content. It is used as a gluten-free flour in baking and flatbreads, often blended with other flours since it lacks the gluten needed for elastic dough structure. It produces a denser result than wheat flour when used on its own.
