Lentils (canned drained)
Lentils are small, lens-shaped legumes available in many varieties, from red and yellow to brown and green, each cooking to a different texture, from soft and creamy to firm and distinct. They are used in soups, stews, curries, and salads, and unlike most dried beans, do not require pre-soaking before cooking. Their earthy, mild flavour makes them a versatile base for many cuisines.
Once drained of its canning liquid, this ingredient weighs less per cup than it does undrained, though usually more than the dried, unsoaked form.
