Lima beans (uncooked)
Lima beans are large, flat, pale green or white legumes with a starchy, buttery texture once cooked, closely related to butter beans. They are used in soups, stews, and side dishes, and dried beans require soaking before an extended simmer, while frozen or canned versions are more convenient. Fresh lima beans have a greener colour and a slightly different flavour than the dried form.
